The leakage of the plasma membrane occurs when chopped beetroot pieces are maintained in hot water. Beetroot pigments are released into the water as a result, and the water becomes colored. Because the temperature of cold water is insufficient to promote leaking in the plasma membrane, beetroot pieces do not leave color in cold water.
